Where once ran the ancient spice routes and
the tracks of Nabataean camel caravans, life is returning as
in the past.
Once again, olive groves and vineyards bloom
in the midst of the desert. From here we proudly produce this
select olive oil, with its natural aroma and rich but delicate,
fruity taste. These olives, which grow in the groves of Kibbutz
Revivim, are planted in virgin, clay-chalk soil and nourished
with brackish water. This unique method of cultivation, which
increases the sweetness and quality of the olives and their oil,
is the result of 20 years of research. Our oil press sits by
the olive groves, ensuring that the oil is produced from freshly
picked olives.
Our method of oil production is traditional,
based on ancient Roman-Byzantine knowledge but enhanced by the
use of modern Italian equipment. The processes of sorting and
cleaning the olives, as well as grinding, pressing, and separations,
are all done by hand under professional supervision. Maintenance
of production temperatures below 22 degrees C is strictly adhered
to, in order to achieve the highest quality results. Abiding
by the "cold process" method limits the amount of oil
that can be produced, but ensures its exceptional quality. This
process maintains the integrity of the unsaturated fatty-acid
chains, and preserves the medicinal values of the olive oil,
whose benefits have been appreciated by humankind for over 3000
years.
